The durable but flexible plastic bag, made from a poly-laminated plastic material (polyester metallized with aluminum and polyethylene for food products), is filled without trapping air, and even when emptied, oxygen does not penetrate the bag. As the liquid is dispensed, the exit valve prevents air from entering after opening, and the flexibility of the material ensures that the contents are less susceptible to hyperoxidation, with less alteration of organoleptic properties.

Since oil and wine are protected from contact with air, light, and other external agents, they can be stored for a long time. Extra virgin olive oil packaged in bag-in-box containers maintains its quality for longer periods and under more difficult conditions compared to extra virgin olive oil stored in tinplate containers, according to recent studies conducted by various universities.
